We love tacos! We have been eating a lot of wraps for lunch and we were all tortilla’ed out, so we made some taco bowls. They were delicious, super filling, and pretty healthy!

Ingredients:
1 lb turkey burger
1 can corn drained or 2-3 stalks of corn on the cob (sliced off the cob)
1 can black beans drained
1 green bell pepper
1 yellow bell pepper
2 poblano peppers
2 jalepenos
1 onion (we used yellow, use whatever)
2-3 tablespoons of cumin
1 tablespoon garlic
1/2 tablespoon onion powder
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 teaspoon paprika
2 teaspoons red pepper flakes
(if you want to use a taco season packet instead, go right ahead!)
1/4 cup water
Salt/pepper to taste
Olive oil to coat pan
1 avocado
Sour cream for serving
Salsa for serving
Lettuce for serving
Shredded cheese of your choosing for serving
Ranch for serving (super optional)
Directions:
I started by chopping all the vegetables. I diced them pretty small. I put the turkey burger in with some olive oil and cooked it until it was brown before adding in all the vegetables.
I add all of the spices and a the water and continue stirring occasionally. I added the corn and the black beans toward the end.
I made a quick guacamole with some of the onion, jalepeno, a few shakes of each of the above seasonings and mashed it all together.
I put the taco mixture in the bottom of the bowl, added a handful of lettuce and topped with a spoonful of sour cream, guacamole, salsa, a sprinkle of cheese and a drizzle of ranch. I put a few tortilla chips on the side to start and I keep adding chips in as I eat through the bowl to have a crunch in every bite!
