In my mind, a summer pasta has vegetables, and a really light sauce. I make this a lot in the summer instead of a normal red sauce or alredo.
1 tablespoon olive oil
1 bell pepper (any kind, we had orange today!)
3 cloves of garlic
3-4 links of chicken sausage
1 tablespoon red pepper flakes
4 shakes basil
3 shakes oregano
1/4-1/2 cup of white wine
3 tablespoons butter
Handful of mozzarella
1 box of pasta
A couple springs of fresh basil
Salt and Pepper to taste
Boil some water and cook pasta according to box. Don’t forget to add salt to the pasta water!
Dice all of your veggies and then sauté together with the chicken sausage in olive oil until everything is cooked through. Add spices and wine. Let wine cook out a bit.
Add butter and mozzarella to drained pasta and then add to the veggie mixture.
Add fresh basil and enjoy!
